Gingerbread, With Love

There’s something about gingerbread that calls you back—to childhood, to warmth, to the first glimmer of the holidays. And not just any gingerbread. I’m talking about my gingerbread. The one that’s spicy, dark, rich, and unapologetically bold. It’s not a cookie. It’s not a loaf. It’s an experience.

A Recipe with a Backstory
Years ago, someone brought this gingerbread to a gathering, and I couldn’t stop thinking about it. It had weight. Depth. The flavor was beyond sweet—it was smoky, peppery, and full of nuance. I tracked down the recipe, scribbled it on a card, and it’s followed me ever since.

Every December, without fail, this gingerbread makes its way into my oven—and into the hands of friends, neighbors, doormen, colleagues, and anyone lucky enough to be on my Nice List. It’s become a ritual. A scent. A signature.

The sugar. The apple butter. The molasses-like richness. The batter that blooms in the oven until the whole house smells like something ancient and comforting. And then—once it’s cooled, frosted, and maybe sprinkled with a few chopped walnuts—it becomes something more: a gift. A gesture. A way of saying, I thought of you. I made this for you.

A Loaf of Love
I’ve always believed food is a kind of language. And this gingerbread? It speaks fluently. It says: I care enough to make something by hand. It says: I remember what you told me last year. It says: I may not have time to write a card, but I took time to bake you a loaf.

My Fabulous Gingerbread
Yields one 9 x 5 loaf

Ingredients for the loaf:

  • ½ cup (1 stick) unsalted butter, room temperature
  • 1 cup sugar
  • ½ teaspoon vanilla extract
  • 1 large egg
  • 1 cup apple butter
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon nutmeg

 

Ingredients for the frosting:

  • 4 oz cream cheese (½ block), room temperature
  • 1 teaspoon vanilla extract
  • 1½–2 cups powdered sugar
  • Chopped walnuts, for topping (optional)

Instructions for the loaf:

  1. Preheat oven to 350°F. Spray a 9 x 5 loaf pan lightly with nonstick cooking spray (preferably the kind with flour).
  2. Using a stand mixer or handheld electric mixer, cream together butter and sugar until fluffy.
  3. Beat in vanilla and egg. Then blend in the apple butter.
  4. Slowly add flour, baking soda, salt, and spices.
  5. Pour batter into the prepared loaf pan.
  6. Bake for about 55 minutes, until risen and a toothpick inserted in the center comes out clean.
  7. Let cool completely on a rack before frosting.

Instructions for the frosting:

  1. Beat the cream cheese with vanilla until smooth.
  2. Gradually add powdered sugar until the mixture is thick, creamy, and spreadable.
  3. Frost the cooled loaf and sprinkle with chopped walnuts if desired.
